Zucchini Stir-fry with Salted Shrimp

Wash the zucchini well, cut it lengthwise, then slice into half-moons about 0.5 cm thick.

Julienne the onion.

Heat perilla oil in a pan and stir-fry the onion and zucchini over high heat. Cooking the zucchini on high heat keeps it from discoloring and preserves its green color.

Add the salted shrimp and minced garlic right away and stir-fry — the zucchini cooks quickly, keeping its crisp texture and nutty flavor.

To keep the pretty green color all the way to the table, spread the stir-fried zucchini thinly on a wide plate or tray and let it cool in a cool spot. Leaving it in the pan too long will change the color quickly.
