Zucchini Noodles 4 Ways (Bibim, Janchi, Spaghetti & Ramen)
Four low-calorie noodle dishes made by slicing zucchini into thin noodle strands! From bibim-guksu to janchi-guksu, spaghetti, and ramen, one zucchini-noodle base lets you enjoy a whole range of light, diet-friendly summer dishes.

Ingredients
1) Zucchini Bibim-guksu
- Zucchini1
- Gochujang2 tbsp
- Red pepper flakes (gochugaru)1/2 tsp
- Soy sauce1 tbsp
- Sugar1 tbsp
- Vinegar2 tbsp
- Minced garlic1 tbsp
- Sesame oil1 tbsp
- Vegetables (garnish)a little
- Sesame seeds1/2 tsp
2) Zucchini Janchi-guksu
- Zucchini1
- Anchovy-kelp broth3-4 cups
- Soy sauce1 tbsp
- Salt1/2 tsp
- Egg garnish (jidan)a little
- Dried kelp (dasima)a little
- Shredded red peppera little
3) Zucchini Spaghetti
- Zucchini1/2
- Broccoli1/4
- King oyster mushroom1/2-1
- Onion1/4
- Spaghetti sauce2 tbsp
4) Zucchini Ramen
- Zucchini1/2
- Instant ramen noodles1/2 pack
- Ramen soup base1 packet
Directions

Base for all the dishes: cut the zucchini into thin, long strands like noodles.

[Bibim-guksu] Sprinkle the zucchini noodles with 1/2 tsp salt, cure for 10 minutes, drain, and microwave for 1 minute to make the noodles.

[Bibim-guksu] Top with a sauce of gochujang, gochugaru, soy sauce, sugar, vinegar, minced garlic, and sesame oil plus garnishes, and toss to combine.

[Janchi-guksu] Make the zucchini noodles as in step 2.

[Janchi-guksu] Place in a bowl, pour in anchovy-kelp broth seasoned with soy sauce and salt, and top with egg garnish and shredded red pepper.

[Janchi-guksu] You can also boil thin wheat noodles and mix half-and-half with the zucchini noodles — halving the noodles cuts calories.

[Spaghetti] Cut the broccoli, king oyster mushroom, and onion into bite-sized pieces, combine with the zucchini noodles, and top with 2 tbsp spaghetti sauce.

[Spaghetti] Cover and microwave for about 2 minutes 30 seconds. (Covering keeps the sauce from splattering.)

[Spaghetti] Mix well with the sauce and plate.

[Ramen] Cook 1/2 pack of ramen noodles and the zucchini noodles together with the ramen soup base.

[Ramen] To cut more calories, skip the ramen entirely and cook just the zucchini noodles in the ramen soup base.

Tips
Salt the zucchini noodles briefly, drain, and microwave to get a noodle-like texture. Using only half the real noodles and mixing in zucchini noodles cuts calories a lot, and the zucchini works with any seasoning, including ramen soup base.
