Yeolmu Bibim-guksu (Spicy Young Radish Kimchi Noodles)
A super-easy, spicy-and-tangy yeolmu bibim-guksu to revive your appetite on a hot day! Toss boiled somen noodles with crunchy young-radish kimchi and a gochujang sauce, top with a boiled egg, and a summer treat is ready in minutes.

- Sugar2 tbsp
- Red pepper flakes (gochugaru)1 tbsp
- Soy sauce2 tbsp
- Sesame oil1 tbsp

Directions

Boil 2 eggs for about 9 minutes until hard-boiled.

Boil the somen noodles in boiling water for about 5 minutes.

Mix 2 tbsp gochujang, 2 tbsp sugar, 1 tbsp red pepper flakes, 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tbsp vinegar to make the sauce.

Rinse the boiled somen in cold water to remove the starch and make it springy.

Add the sauce and yeolmu kimchi to the noodles, toss well, plate, top with the boiled eggs, and sprinkle with sesame seeds to finish.
Tips
Rinse the somen in cold water several times to wash off the starch so it stays springy and doesn't get soggy. A splash of the yeolmu kimchi brine makes it even tangier and more refreshing.
