  • Potato1
  • Carrot1/4
  • Mushrooms100g
  • Olive oil2 tablespoons
  • Peperoncino (dried chili)2
  • Chicken stock cube1
  • Water2 cups (400ml)
  • Black peppera little
  • Grated parmesan cheese1 tablespoon
  • Parsleya little
  • Bay leaves2 leaves (optional)
  • Dried basil1 tablespoon (optional)

    Witch's soup is a great way to clear out the fridge. Cut all the ingredients into small, bite-sized pieces.

    Heat the olive oil in a pot and sauté the chicken breast and onion over low heat until cooked through.

    Add the potato and carrot and stir-fry over medium heat for 1 minute.

    Add the remaining ingredients, tearing the peperoncino by hand to add a spicy kick.

Tips

Adjust the peperoncino to your spice preference, and the bay leaves and dried basil can be skipped if you don't have them. Make a big batch and refrigerate it for a hearty meal-prep diet.
