Whole Wheat Bagels

Brunch bagels made from 100% whole wheat dough and baked in an air fryer. Fully whole wheat bagels are hard to find in stores, but baking them at home gives you fresher, warm, and wonderfully chewy bagels.

    Make three wells in the whole wheat flour, add the yeast, salt, and sugar to separate wells, then mix lightly.

    Pour in the warm water a little at a time, adjusting the dough's consistency, and knead by hand for about 20 minutes.

    Let the dough rise in a warm place for 30 minutes until it grows about 1.5 times in size. Cover it with plastic wrap so it doesn't dry out.

    Divide the dough into 100g pieces and round them, then cover and let rest for about 10 minutes.

    Roll each piece into a long rope and join the ends to shape it into a bagel.

    Neaten the shape so the hole in the center stays even.

    Shape the remaining dough into bagels the same way.

    Let the shaped bagels proof for a second rise of 30 minutes.

    Heat water to just below boiling, add the bagels, and blanch for 10 seconds on each side.

Tips
