  • Castella (sponge cake)2 (or use cake sheet)
  • Heavy cream500ml (or whipping cream)
  • Cream cheese200g (or mascarpone)
  • Espresso3 shots (or instant coffee)
  • Sugar10% of the cream
  • Cocoa powder2 tbsp

    Prepare all the ingredients: a glass container, heavy cream, sugar, cream cheese (or mascarpone), castella, cocoa powder, and espresso (instant coffee works too). Cut the castella to fit the size of the container.

    Use ready-made whipped cream, or whip cream and sugar at a 10:1 ratio, then mix it well with the cream cheese at a 1.5:1 ratio to finish the cream. Traditionally it's made with mascarpone, but cream cheese works as a substitute.

    Pull 3 shots of espresso, skim off the crema, and let it cool slightly before using.

    Line the container with cut castella and brush the cooled espresso over it to moisten it well.

    Layer it up evenly in the order cream, castella, espresso, cream, spreading each layer smoothly.

    Chill in the fridge for about 1 hour to set.

    Dust cocoa powder evenly over the top through a fine sieve, and it's done.

Tips

Cream whips up better when it's cold. A mixer works well too. You can substitute strongly dissolved instant coffee for the espresso, and if cocoa powder is hard to get, cocoa or hot chocolate powder works instead.
