Tabbouleh (Middle Eastern Salad)
An easy homemade take on tabbouleh, one of the Middle East's classic appetizers (mezze). Fresh salad greens and herbs are tossed with avocado and tomato in lime juice and served with pita bread for a healthy bowl.

- Basil30g
- Lime1/2 (can substitute lemon)
- Avocado1
- Basil oilTo taste (can substitute olive oil)
- Parmesan cheeseTo taste
- Ripe tomato1/2 (seeds removed)
- Pita bread1 pack (5 pieces)
Directions

Finely chop an assortment of salad greens and add them to a bowl. A mix of crisp lettuces and slightly bitter chicory works best.

Finely chop basil and add it in. Easy-to-find sweet basil is plenty; add a little mint, dill, or cilantro if you like.

Squeeze the juice of half a lime over the greens.

Grate in parmesan cheese to taste.

The parmesan seasons the salad, so no extra salt is needed, but add some to taste if it's bland.

Finely chop a ripe avocado and a seeded ripe tomato.

Plate the tossed salad, top with the tomato and avocado, and finish with a little more parmesan.

Lightly toast the pita bread in a pan. Substitute tortillas or other bread if you don't have pita.

Cut it in half for easy eating.

Serve the pita alongside the salad; tuck the salad into the bread and enjoy with wine for a healthy meal.
