Sweet Dak-gangjeong (Korean Fried Chicken Bites)
Crispy fried chicken coated in a sweet, tangy, and slightly spicy sauce — a nostalgic Korean favorite. It makes a perfect snack for kids and a great side for a cold beer.

Ingredients

- Milk1 cup
- Egg yolk1
- Starch powder6 tbsp
- SaltA pinch
- Black pepperA pinch
- Oil for fryingas needed
- Peanut powderA pinch
Sauce
- Grapeseed oil2 tbsp
- Minced garlic1 tbsp
- Gochujang1.5 Tbsp
- Ketchup3 Tbsp
- Honey4 tbsp
- Soy sauce1/2 tbsp
- Vinegar1 tbsp
- Water1/2 cup

Cut the chicken breast into bite-sized pieces. For a more tender texture, you can use chicken tenderloin or thigh meat instead.

Soak the prepared chicken in milk for 30 minutes to remove any gamey smell.

Drain off the milk and season the chicken with salt and pepper.

Add the egg yolk and mix everything together evenly.

Add the starch powder and toss to coat evenly. If the coating doesn't stick well, add a little more starch until every piece is evenly coated without being sticky.

Fry the chicken pieces one by one in 160°C oil, then raise the temperature to 180°C and fry once more until golden and crispy. Drain on paper towels.

Mix gochujang, ketchup, honey, soy sauce, vinegar, and water to make the sauce. You can use corn syrup or oligosaccharide syrup instead of honey.

Heat grapeseed oil in a pan and sauté the minced garlic until fragrant.

Pour in the prepared sauce and simmer over high heat for 2–3 minutes. For a thicker sauce, reduce it for about 2 minutes more.

Add the fried chicken, toss to coat evenly in the sauce, then plate it and sprinkle with peanut powder to finish.

Measurements are based on a rice spoon (tablespoon) and a paper cup.
