Shrimp Scampi Linguine

    Prepare the lemon juice and lemon zest.

    Add salt and the leftover lemon peel to 1L of water, then boil the linguine for 3-4 minutes.

    Sear the shrimp in olive oil, then add butter, salt, and pepper.

    Add more olive oil to the pan the shrimp were cooked in and sauté the minced garlic and peperoncino.

    Add the boiled linguine and stir-fry for about 3 minutes.

    Turn off the heat, add the remaining butter, and toss to combine.

    Plate the pasta, then top with the shrimp, lemon zest, dill, cheese, and lemon juice.

1. Thinly slice only the fragrant outer peel of the lemon and freeze it — handy to have on hand for other dishes too. 2. Butter burns easily over high heat, so sear the shrimp in olive oil first and add the butter at the end. 3. Feel free to add herbs to taste — fresh dill pairs especially well with the bright lemon flavor. 4. Add the lemon juice last, after turning off the heat, so its bright aroma doesn't cook off and it cuts through the richness of the butter.
