Quick Seasoned Pork Shoulder (Soy-Glazed)
A sweet-savory soy-glazed pork shoulder simmered in a quick stir-together sauce! No marinating needed — the sauce reduces right onto the meat for a glossy glaze, great as a rice side or a drinking snack.

- Pork shoulder (neck)300 g
- Water20 cc
Sauce
- Sugar1 tbsp
- Soy sauce1 1/4 tbsp
- Corn syrup2 tbsp
- Grated garlic1/2 tbsp
- Ginger powder1 pinch
- Cooking wine1 tbsp
- Oyster sauce1/2 tbsp
- Black pepper1 pinch
- Chopped green onion1 tbsp

Combine all the quick-sauce ingredients and stir well until the sugar fully dissolves.

Preheat a frying pan thoroughly, then sear the pork on both sides over high heat. (If the heat is too low, the juices run out and it can smell gamey, so always sear over high heat.)

Once both sides of the pork are browned, spoon the sauce evenly over it.

After pouring on the sauce, add about 20 cc of water. (You can also add it when making the sauce.)

Boil vigorously for about 30 seconds, then lower the heat and cut the meat into bite-sized pieces.

Turn the heat back up high and, stirring with a spatula, reduce the sauce until almost no liquid is visible.

When it's glossy, it's done. It pairs well as a rice side or a drinking snack.
Tips
Sear the pork over high heat so it keeps its juices and doesn't smell gamey. Reduce the sauce over high heat at the end until almost no liquid remains for a glossy, well-coated glaze.
