Sausage and Vegetable Stir-fry
Glossy sausage and vegetable stir-fry in a sweet-and-tangy sauce. A versatile plate — great as a side for kids and a beer snack for grown-ups.

Sauce
- Ketchup4 tbsp
- Corn syrup (or oligosaccharide)8 tbsp
- Plum syrup3 tbsp
- Oyster sauce1.5 tbsp

Cut the carrot and onion into bite-size pieces.

Score the cocktail sausages with shallow cuts.

Blanch the sausages in boiling water for about 1 minute.

Drain the blanched sausages well.

Heat oil in a pan and stir-fry the carrot and onion over high heat.

Add the blanched sausages and stir-fry once more.

Add the ketchup, corn syrup (or oligosaccharide), and oyster sauce, and stir-fry.

Add the plum syrup and reduce the sauce over high heat.

When the sauce reduces to a glossy, sticky glaze, it's done.
Tips
Scoring and blanching the sausages removes excess fat and helps the sauce cling. Reduce the sauce quickly over high heat for the glossiest finish.
