Pyeonyuk can be made from beef brisket or from pig's head; when people simply say pyeonyuk they usually mean the version made from pig's head, which pairs especially well with makgeolli (Korean rice wine).

    Put the cleaned pig's head into a large pot, pour in about 4 liters of water, add the doenjang, cinnamon, bay leaves, and cloves, and bring to a rolling boil.

    Put the fully boiled pork into a clean net bag and wrap it tightly in cheesecloth; set a flat dish in a large basin, place the meat on top, cover it with a wide plate, and press it down with a heavy weight.

    After pressing for about half a day, the pyeonyuk is ready.
