Potato Salad Sandwich
Soft, fluffy potato salad piled into soft dinner rolls. Cucumber and apple keep it refreshing — perfect for a picnic or brunch lunchbox.

Dressing

Directions

Peel the potatoes, boil them with a little salt, then mash in a bowl.

Boil the eggs with a little salt too, peel them, and mash together with the potatoes.

Thinly slice the cucumber into rounds, salt with 1/4 spoon for 20 minutes, then squeeze out the water with a cloth.

Core the apple, halve it lengthwise and slice thinly; cut the sliced ham into strips.

Add the cucumber, apple, ham, mayonnaise, plain yogurt, and sugar to the mashed potato and egg, and toss gently.

Slit the dinner rolls down the middle, spread whole-grain mustard on the cut sides, tuck in lettuce, and fill with the potato salad.
Tips
Salting and squeezing the cucumber keeps the salad from getting watery. Mash the potatoes while hot for the smoothest texture.
