Creamy Potato Salad
A versatile potato salad that's great on its own or tucked into a sandwich. Fluffy boiled potatoes are mixed with hard-boiled egg, cucumber, and crab sticks, then tossed in a tangy, creamy dressing of mayo, yogurt, and mustard. Salt and squeeze the cucumber well so the salad stays clean, not watery.

Boil the eggs ahead of time and finely chop them.

Boil the potatoes.

Salt the cucumber, then squeeze out the water firmly with a paper towel.

Mash the potatoes while hot and let them cool slightly.

Once the mashed potato has cooled, add the prepared ingredients and season lightly with salt and pepper.

Tips
