Potato Gratin
A French-style potato gratin made with boiled potatoes, bacon, and corn folded into a creamy milk and butter white sauce, topped generously with mozzarella cheese and baked. Easy to finish off in an oven or microwave.

Slice the potatoes about 0.5cm thick, add to a pot of water, and boil for about 15 minutes.

Drain the boiled potatoes in a colander and season with a little salt and pepper.

In a pan, fry the bacon until golden brown.

Melt butter in the pan, then add the onion and minced garlic and sauté until the onion turns golden brown.

Add the flour and cook, stirring, until the raw flour smell disappears.

Add the milk along with the boiled potatoes, fried bacon, and corn, and cook everything together.

Once the sauce has thickened, season to taste with salt and pepper.

Transfer everything to an oven-safe dish, top generously with mozzarella cheese, and heat in the oven or microwave until the cheese melts — your potato gratin is ready.
Tips
Take the potatoes off the heat while a chopstick still meets a little resistance in the center — they'll hold their shape while sautéing. Mixing in some cheddar with the mozzarella gives a richer, nuttier flavor.
