    Take a handful of rice noodles and soak them in lukewarm water; once the noodles turn soft, drain them in a colander.

    Prepare a generous amount of bean sprouts, rinse them in clean water, then drain them in a colander.

    Julienne the onion and zucchini. You can also use bok choy or garlic chives instead of zucchini.

Tips

Bean sprouts turn bitter if over-stir-fried, so cook them just until slightly wilted. Soak the rice noodles in lukewarm water so they don't stick together and cook evenly when stir-fried.
