No-Bake Oreo Cheesecake
An Oreo cheesecake set in the fridge with no oven needed. Smooth cream cheese meets rich Oreo cookies — a dessert perfect even on hot summer days.

Ingredients
Base
- Oreo cookies (cream removed)75g

Cheese Filling
- Cream cheese250g
- Sugar70g
- Plain yogurt200g
- Heavy cream200g
- Oreo cookies100g
- Gelatin sheets8g
- Lemon juice (optional)1 tsp
Topping
- Oreo cookies for topping40-50g

Remove the cream from the base cookies, crush them fine, mix well with softened butter, and press firmly into the bottom of a mousse ring. Soak the gelatin sheets in lukewarm water to soften.

Beat the softened cream cheese until smooth, then mix in the sugar.

Add the lemon juice and mix well. (Optional)

Add the unsweetened plain yogurt and mix well.

Mix half of the 200g of heavy cream into the batter.

Break the filling Oreo cookies into large chunks, fold them in, and mix.

Squeeze the softened gelatin into the remaining cream, microwave briefly to melt it, mix into the cream, then fold into the batter until even.

Pour the batter over the cookie base in the mousse ring, scatter crushed topping Oreos on top, and chill in the fridge until fully set.
Tips
Let the cream cheese come to room temperature so it beats smooth without lumps. Don't overheat the gelatin — melt it just gently for a smooth set.
