Napolitan Spaghetti
A ketchup-based pasta that's perfect for using up the odds and ends of vegetables left in your fridge. Even without any special sauce—just ketchup—this Japanese-style Napolitan spaghetti delivers guaranteed flavor.

- Oyster sauce1 tsp

Cook the spaghetti to your preferred doneness, then drain and set aside.

Slice the onion and sausage to a moderate thickness. Adding black olives or button mushrooms makes it even tastier.

Add the onion to a pan with cooking oil and sauté over medium heat until it softens.

Once the onion is partly cooked, add the sliced sausage and a pinch of sugar, and sauté without letting it burn.

Add the cooked noodles and toss until they loosen, then lower the heat almost off and season with ketchup and oyster sauce. Adjust the ketchup one tablespoon at a time.

Finally, turn off the heat and finish with black pepper to taste.

You can add Parmesan cheese, hot sauce, or herbs like oregano and parsley to taste for an even more delicious result.
Tips
Adding a knob of butter to the sautéed ingredients before the noodles gives a richer flavor.
