Stir-fried Dried Anchovies (Myeolchi-bokkeum)

A crispy, nutty side dish that everyone loves! Coated in a sweet-savory glaze and finished with nuts, this stir-fried anchovy dish is perfect over rice or as a snack with beer.

  • Anchovies (dried)100g
  • Mirin2 tbsp
  • Soy sauce1/2 tbsp
  • Sugar2 tbsp
  • Oligo syrup2 tbsp
  • Sesame oil1/2 tbsp
  • Toasted sesame seedsas needed
  • Nuts1/2 cup

    Step 1

    Sift 100g of small dried anchovies (about 2 paper cups) through a sieve to remove crumbs, then dry-roast them in an oil-free pan over medium-low heat for 6–7 minutes. Sift the roasted anchovies once more to shake off any remaining crumbs.

    Return the anchovies to the pan, add the nuts, and stir-fry together for about 1 minute.

    Pour 2 tbsp of mirin and 1/2 tbsp of soy sauce down the side of the pan, stir-fry briefly, then turn off the heat. Finish everything with the residual heat only.

    Add 2 tbsp of sugar and toss to coat evenly, then add 2 tbsp of oligo syrup and toss once more.

    Finally, drizzle with 1/2 tbsp of sesame oil and sprinkle generously with toasted sesame seeds to finish.

    Nutty and crispy yet never hard, kids happily eat it and for grown-ups it makes an excellent snack with beer.
