Minestrone
Minestrone is a traditional Italian vegetable soup made easily with tomato juice. Potato, carrot and onion plus bacon make it hearty, while the bright tang of tomato adds depth to the broth.

- Tomato juice1 cup
- Onion1/2
- Potato1
- Carrot1/3
- Bacon4 strips
- Ketchup2 tbsp
- SaltA pinch
- Black pepperA pinch
- Water2 cups
Directions

Peel 1/3 carrot, 1 potato and 1/2 onion, then cut them into roughly 1cm cubes.

Pour 2 cups of water into a pot and boil until the vegetables are cooked through.

When the vegetables are half-cooked, add the bacon cut to a similar size and continue boiling together.

Once the vegetables are fully cooked, add 1 cup of tomato juice, 2 tbsp of ketchup, salt and pepper, then boil for another 5 minutes to finish.
Tips
Using whole canned tomatoes or cherry tomatoes instead of tomato juice makes the broth taste even deeper.
