Braised Semi-dried Pollock (Kodari-jorim)

  • Soy sauce3 Tbsp
  • Cooking wine2 tbsp
  • Ginger wine1 tbsp
  • Minced garlic1 tbsp
  • Honey1 tbsp
  • Water2/3 cup
  • Green onion1 stalk
  • Cooking oilA pinch

Directions

    Step 1

    Rinse the semi-dried pollock in cold water, then cut off all the fins with scissors.

    Cut into bite-sized pieces.

    Prepare the sauce in advance: mix 3 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp ginger wine, 1 Tbsp minced garlic, 1 Tbsp honey and 2/3 cup water, then stir in the thinly sliced green onion.

    Lightly coat the braising pot with cooking oil and stir-fry the pollock briefly until the surface turns golden.

    Pour the prepared sauce over the stir-fried pollock and let it braise.

    When the braising liquid has reduced, raise the heat to high and finish by spooning the sauce over the fish until glossy.
