Stir-fried Seasoned Dried Squid (Jinmichae-bokkeum)
A soft, non-chewy stir-fried dried squid that works great as a rice side dish or a drinking snack.

Sauce
- Mayonnaise2 tbsp
- Gochujang (red chili paste)2 tbsp
- Red chili powder1 tbsp
- Soy sauce1.5 Tbsp
- Minced garlic1/2 tbsp
- Sesame oil1 tbsp
- Sugar1 tbsp
- Oligo syrup1.5 Tbsp
- Sesame salt1/2 tbsp

Rinse the dried squid twice in water and drain well.

Add 2 tablespoons of mayonnaise.

Toss to coat evenly and let it sit for a moment.

Mix 1.5 tbsp soy sauce, 2 tbsp gochujang, 1 tbsp chili flakes, 1 tbsp sugar, 1/2 tbsp minced garlic and 1 tbsp sesame oil to make the sauce.

In a lightly oiled pan, add the sauce and 4 tablespoons of water, then bring to a simmer over low heat.

When the sauce comes to a boil, add the dried squid and stir-fry.

Stir-fry quickly so the sauce coats everything evenly.

Finally, add 1.5 tablespoons of oligo syrup, sprinkle with sesame seeds, and it's done.
Tips
Dried squid toughens if over-cooked, so stir-fry quickly just to coat it. The water and mayonnaise are the secret to keeping it soft.
