Jat Guksu (Korean Cold Pine Nut Noodle Soup)
If the beany taste of kongguksu puts you off, try jat guksu made from finely ground pine nuts. Somyeon noodles in a nutty pine nut broth topped with crisp cucumber — a refreshing summer treat with no fishy or beany flavor.

- Chicken broth2.5 cups
- Somyeon (thin noodles)1 serving

Wash the cucumber well and cut it into thin julienne strips.

Put the pine nuts, chicken broth, and salt in a blender, blend until smooth, then strain once through a sieve for a silky pine nut broth.

Add a little salt to boiling water, boil the somyeon noodles, then rinse them in cold water and drain.

Place the noodles in a bowl, pour over plenty of the chilled pine nut broth, and top with the julienned cucumber to finish.
Tips
Grinding the pine nuts finely and straining them makes the broth much smoother and nuttier. Chilling the pine nut broth and the bowl in advance lets you enjoy it even colder.
