5-Minute Janchi Guksu (Korean Noodle Soup)
The ultimate janchi guksu, ready in just 5 minutes. Anchovy broth boosted with tuna sauce makes a deep-flavored soup, finished with a perilla oil seasoning.

Broth
- Water1L
- Anchovy broth concentrate4 spoons
- Tuna sauce (chamchi-aek)1 spoon

Seasoning
- Minced garlic1/2 spoon
- Perilla oil3 spoons
- Red pepper flakes1 spoon

Boil the noodles. A pinch of seasoned salt in the water seasons the noodles from within.

Julienne the onion, carrot, and zucchini, and have the shrimp ready.

Heat oil in a pan and stir-fry the vegetables just until they soften.

Add 1L of water, 4 spoons of anchovy broth concentrate, and 1 spoon of tuna sauce, then bring to a boil — the broth comes alive.

Mix the minced garlic, perilla oil, red pepper flakes, and sesame seeds into a seasoning sauce. Bowl up the noodles and broth, top with the sauce, and serve.
Tips
Rinse the boiled noodles in cold water so they don't get soggy. Add the perilla oil seasoning right before eating to keep its aroma.
