Hobak-bokkeum (Korean Zucchini Stir-fry)
A simple side dish of sautéed zucchini with green onion and red chili.

Let's make hobak-bokkeum, a simple zucchini stir-fry.

Prepare the ingredients: 1 zucchini, 1 stalk of green onion, 1 red chili, and for the seasoning, 2 tbsp perilla oil, 1/3 tbsp minced garlic, and 1/3 tbsp salt.

Cut the zucchini into quarters and slice, then thinly slice the green onion. The red chili is just for color, so feel free to skip it if you don't have any.

Heat perilla oil in a pan and sauté the green onion and minced garlic.

Once the green onion smells fragrant, add the sliced zucchini.

Once the zucchini is coated in oil, season with salt. Salted shrimp works well too, but I used salt this time — adjust the amount to your taste.

Stir-fry for about 3 more minutes, and once the zucchini is cooked through, add the red chili and toasted sesame seeds for one final toss.

A simple side dish, hobak-bokkeum, is ready.
