Directions
- 1

Marinate the beef with salt, black pepper, olive oil, and rosemary.
- 2

Finely mince the garlic and onion.
- 3

Zest the lemon peel and squeeze the flesh to prepare lemon juice.
- 4

Mix the butter with the minced garlic, onion, 1 spoon of lemon juice, and 1/2 spoon of lemon zest to make the herb butter.
- 5

Place the herb butter on parchment paper, roll it up, and chill in the fridge until firm.
- 6

Heat 2 spoons of olive oil in a hot pan and sear the steak until the outside is crisp.
- 7

Slice the chilled herb butter and serve it on top of the steak to finish.
Tips
Make the herb butter ahead and keep it chilled — it's also great on toasted bread or other meat dishes. Let the steak rest at room temperature before searing for more even cooking.
