Ham & Egg Fried Rice
Ham and egg fried rice with a smoky depth from searing dark soy sauce against the hot pan. Made with just ham, eggs, onion, and green onion, it turns out fluffy and savory enough to clear a whole bowl in no time. A hearty meal you can put together in 20 minutes with what's in the fridge.

- 3

Next, add the ham and stir-fry lightly.
- 4

Push the stir-fried ingredients to one side, pour the beaten eggs into the empty space, and cook while stirring with chopsticks.
- 5

Add the rice and stir-fry, mixing well until fluffy.
- 6

Push the fried rice to one side, pour 1 Tbsp of dark soy sauce into the empty space and let it sear, then mix it well with the rice.
- 7

Season with salt to taste, then finish by adding 1 Tbsp of sesame oil and ground sesame and mixing well.
Tips
Use cold, leftover rice rather than freshly cooked rice for a fluffier result. The dark soy sauce should touch the bare bottom of the pan and be seared so its smoky aroma and savory depth come through.
