Ham & Egg Fried Rice

  • Cooked rice2 bowls (about 360g)
  • Eggs2
  • Onion1/4
  • Green onion1/2 stalk

Seasoning

  • Cooking oil3 Tbsp
  • Dark soy sauce (jin-ganjang)1 Tbsp
  • Saltto taste
  • Sesame oil1 Tbsp
  • Ground sesameto taste

Directions

    Cut the ham and onion into bite-sized pieces and finely slice the green onion. Beat the eggs well until the whites and yolks are blended.

    Heat 3 Tbsp of oil in a pan over medium heat, then add the onion and green onion and stir-fry until golden.

    Next, add the ham and stir-fry lightly.

    Push the stir-fried ingredients to one side, pour the beaten eggs into the empty space, and cook while stirring with chopsticks.

    Add the rice and stir-fry, mixing well until fluffy.

    Push the fried rice to one side, pour 1 Tbsp of dark soy sauce into the empty space and let it sear, then mix it well with the rice.

    Season with salt to taste, then finish by adding 1 Tbsp of sesame oil and ground sesame and mixing well.

Tips

Use cold, leftover rice rather than freshly cooked rice for a fluffier result. The dark soy sauce should touch the bare bottom of the pan and be seared so its smoky aroma and savory depth come through.
