Gyukatsu (Japanese Breaded Beef Cutlet)

Gyukatsu is the beef version of tonkatsu. Beef sirloin is coated in panko and fried until the outside is crisp while the inside stays juicy and medium-rare. Slice it thin and enjoy it as is, or sear each piece a little more on a mini grill or hot stone to your preferred doneness.

    Pat the beef dry with paper towels to remove excess blood, then cut into rectangular pieces that are easy to fry.

    Lightly score the meat so it cooks evenly (optional), then season all over with herb salt and pepper.

    Coat each piece in order: frying flour, then beaten egg, then panko. Pour plenty of oil into a pan and heat it over medium heat.

    Once the oil is hot, add the beef and fry until golden on both sides. Too high a heat will burn the surface, so keep it at medium-high and fry for about 6 to 10 minutes total, turning once.
