Potato Gnocchi
A simple way to make the potato gnocchi you enjoy at Italian restaurants right at home. Instead of boiling or steaming, cook the potatoes in the microwave, then knead the dough, cut it into bite-sized pieces, and stuff each with cheese to create cheese-filled gnocchi. Pan-fry them for a crispy exterior and a chewy center.

Wash the potatoes thoroughly and peel them with a peeler. Place them in a plastic bag and microwave for 3 to 4 minutes. Cook them simply, without boiling or steaming.

Take the potatoes out of the microwave and mash them immediately while hot. If undercooked, microwave a little longer. The time varies depending on the size of the potatoes.

Mash the potatoes completely inside the plastic bag, then add the flour and egg and mix evenly.

Once the dough comes together somewhat, gather it into a ball by hand and roll it into a long log.

Shape it into a long log and cut it into bite-sized pieces, like slicing rice cake sticks.

Tuck a little pizza cheese into each cut piece of dough and wrap it up. This makes cheese-filled gnocchi.

If not cooking right away, place them in a storage container and keep them in the freezer.
