Gamja-chae-bokkeum (Korean Stir-fried Potato)
A light everyday side dish of julienned potatoes, briefly parboiled and then stir-fried with onion and carrot and seasoned with sea salt. Parboiling the potato first keeps it crisp, and using little oil gives a clean, delicate finish.

Cut the potatoes into julienne strips of medium thickness and rinse once in water.

Julienne the onion and carrot as well.

Add a few drops of oil to boiling water, then add the julienned potato and parboil for 2 minutes.

Rinse the parboiled potato in cold water and drain well.

Heat oil in a pan and stir-fry the onion and carrot until fragrant.

Add the parboiled potato, stir-fry over medium heat, and season with a little sea salt.

Finish with a sprinkle of toasted sesame seeds and the gamja-chae-bokkeum is done.
