Braised Potatoes (Gamja-jorim)
A light yet nourishing braised potato side dish. Potatoes, carrot, and onion are simmered down in a sweet and savory soy sauce until glossy — a hearty bowl that's perfect with rice. Simple to make and delicious.

Cut the potatoes into bite-sized pieces and stir-fry them in a pan with olive oil until golden.

Once the potatoes are partly cooked, add the carrot and stir-fry together.

Add the seasoning sauce (soy sauce, sugar, oligo syrup, and sesame oil) along with 2 cups of water, and braise over low heat for about 15 minutes.

When the liquid begins to reduce, add the onion. Adding it too early will make it fall apart.

Finally, add the whole garlic cloves and braise. Using whole cloves instead of minced garlic keeps the braising sauce cleaner and lets you enjoy healthy garlic whole. Finish by sprinkling with toasted and black sesame seeds.
