Korean Potato Pancake (Gamja-jeon)
A crispy Korean potato pancake made with julienned potato, bacon, and cheese. Perfect as a rainy-day snack or a side dish that kids love.

- Frying mix2 tbsp

- Parsley flakesA pinch

Julienne the potato as thinly as possible, rinse once and drain, then finely chop about 3 slices of bacon and add them in.

Add 2 tbsp of frying mix, 1 egg, and two pinches of salt so everything binds together.

Mix well. (Frying mix, pancake mix, or starch all work — use whatever you have.)

Heat plenty of oil in a hot pan, spoon in about half the batter, and pan-fry. Make sure the pan is fully heated so the outside turns crispy.

Once the bottom is cooked through, flip it over.

Right away, lay one slice of cheese on top so it melts just enough.

Sprinkle parsley flakes over the top and it's done.
