Gamja-bokkeum (Korean Soy-glazed Potato Stir-fry)
Thick-cut potatoes and onion are stir-fried, then simmered in a sweet-savory sauce of oyster sauce, soy sauce, and sugar. Cooking covered over low heat keeps the potatoes moist and tender.

Cut the potatoes into bite-sized pieces and rinse once in water. Cut the onion into similarly sized pieces.

Heat oil in a pan and add the minced garlic over low heat to make garlic-infused oil. Keep the heat low so it doesn't burn.

Once the garlic becomes fragrant, add the potatoes and onion and stir-fry.

Add the oyster sauce, soy sauce, and sugar, and stir-fry together.

Cover with a lid and cook over low heat. This way, you don't need to add any extra water.

When the potatoes are almost done, add the oligo syrup and simmer a little longer.

Tips
Adjust the seasoning to your taste. The tablespoon measurement is based on a standard rice spoon.
