Homemade Fudge Brownies
Dense, fudgy brownies made from scratch — complete with that signature crackly top that makes a brownie a brownie.

- Unsalted butter35g
- Cake flour75g
- Cocoa powder5g

Put the chocolate and butter in a bowl set over warm water and melt them gently (bain-marie).

Be careful not to let any water get into the chocolate.

In a clean bowl, whip the egg with a hand mixer for 1-2 minutes until foamy, then whip in the sugar a little at a time.

Whip until pale and fluffy — when you drizzle a ribbon over the batter and it holds its shape for 2-3 seconds, it's ready.

Pour the melted chocolate into the egg mixture and combine well.

Sift in the cake flour and cocoa powder and fold them in.

Mix only until no dry flour remains — overmixing makes the brownies tough.

Pour the batter into a parchment-lined pan and bake at 180°C (350°F) for 10-15 minutes.
Tips
Fudginess comes down to bake time. If your pan is larger and the batter sits shallower, shorten the baking time accordingly.
