Flan (Caramel Custard)
A Spanish- and Latin-style custard dessert: caramelize sugar and let it set at the bottom of a dish, then pour in a smooth egg-milk-sugar custard strained through a sieve and steam gently until set. With just 2 eggs, milk, and sugar, you can make a silky, jiggly homemade flan.

Caramel Sauce
- Sugar4 tbsp
- Water2 tbsp
Directions

Add the sugar and water to a pot and boil to make caramel.

Pour the caramel into the bottom of a pudding container and let it set.

In a bowl, mix the eggs, milk, and sugar well.

Strain the egg mixture through a sieve once for a smooth texture.

Pour the egg mixture into the container over the set caramel.

Cover with a lid and steam for 15 minutes to finish.
Tips
Let the flan cool slightly, then chill it in the refrigerator so it sets into a clean shape. Invert it onto a plate to enjoy it the classic way, with the caramel sauce flowing over the top.
