    Melt the butter in a saucepan over medium heat. Cook until it turns brown, then let it cool.

    Lightly whisk the egg whites, then add the sugar and salt and stir gently. Mix in the vanilla extract and honey. Add the cake flour and almond flour sifted three times, and fold gently.

    Add the browned butter and mix. Rest the batter in the fridge for about an hour.

    Butter the financier molds, dust with flour, then turn the pan over and tap out the excess. Fill each mold about 70–80% with batter and bake in an oven preheated to 180°C (350°F) for 15–18 minutes.

Tips

The 1 tablespoon of vanilla extract can be replaced with 2 teaspoons if you use a store-bought product. Brown the butter while stirring so it doesn't scorch, until it smells nutty, for the best flavor.
