Fajitas with Avocado Guacamole
An authentic Mexican-style fajita made by marinating pork (or beef) and chicken breast separately in tangy-sweet sauces, grilling them, and wrapping them in tortillas with sautéed onion, bell pepper, and shrimp. Fresh avocado guacamole and sour cream on the side make it even more flavorful.

Chicken Sauce

Combine 600 g pork (or beef) with 6 tbsp orange juice, 2 tbsp lemon juice, 1 tbsp minced garlic, 2 tbsp fajita seasoning, 2 tbsp avocado oil, and a pinch each of salt and pepper in a zip-top bag and mix well.

Marinate 300 g chicken breast in 1.5 tbsp gochujang, 1 tbsp sugar, 2 tbsp soy sauce, 2 tbsp mirin, 1 tbsp hot sauce, 1 tbsp minced garlic, 1/2 cup water, and a pinch of pepper for 30 minutes.

Heat oil in a pan and stir-fry the onion and bell pepper until lightly browned. (You can add a splash of oyster sauce and a bit of fajita seasoning if you like.)

Add the shrimp and stir-fry together.

Transfer the sautéed vegetables and shrimp to a bowl.

Grill the marinated pork (or beef) until fully cooked, then slice into strips.

Add the chicken breast along with its marinade to the pan.

Cook until the sauce has mostly reduced, flipping often so it doesn't burn.

Mix 1/3 avocado, 3 finely chopped cherry tomatoes, 1 tbsp minced onion, and a pinch each of salt and pepper to make the guacamole.

Stir the guacamole well and transfer it to a bowl.

Plate the grilled meat, vegetables, and shrimp together with sour cream (or your preferred sauce) and the guacamole, and serve with tortillas.
Tips
You can swap the meat for beef, pork, or lamb depending on your preference.
