Eggs Benedict
A simple homemade take on eggs Benedict. Toasted bread is layered with cheese, ham, and a soft poached egg, then finished with a mustard-mayo drizzle.

- Sliced ham1 slice
- Eggs1
- Vinegar1 tbsp
- Mayonnaise1 tbsp
- Mustard1 tbsp
- Parsleyto taste

Cut the bun in half and use only the bottom. Toast it on a dry, ungreased pan until golden on both sides.

Place a slice of cheddar cheese on the toasted bread.

Lightly pan-fry the sliced ham, cut it to the size of the cheese, and place it on top.

Add 1 tbsp of vinegar to a pot of boiling water and gently crack in an egg to make a poached egg. When just the edges of the yolk are set, lift it out, drain on a paper towel, and place it on the bread.

Mix mustard and mayonnaise 1:1, drizzle it in a zigzag over the top, sprinkle with parsley, and it's done.
