Dubu-kimchi (Tofu with Stir-fried Kimchi)

Dubu-kimchi pairs sweet, deeply stir-fried kimchi with soft blanched tofu. With no special ingredients, it works just as well as a drinking snack or a side dish with rice.

  • Aged kimchi300g
  • Tofu1 block
  • Cooking oil2 tbsp
  • Cooking wine1 tbsp
  • Oligo syrup2½ tbsp
  • Sesame oil1 tbsp
  • Water5 tbsp

Directions

    First make the stir-fried kimchi. Slice the aged kimchi into pieces, place it in a pan, and drizzle over 2 tbsp cooking oil and 1 tbsp cooking wine.

    Add 2½ tbsp oligo syrup and 1 tbsp sesame oil, then stir-fry over high heat until sweet and glossy.

    After the initial high-heat stir-fry, lower to medium heat, pour in 5 tbsp water, and cook it down as if simmering.

    Continue stir-frying over medium or medium-low heat for about 15 minutes, until the kimchi is tender.

    While the kimchi cooks, blanch the tofu briefly in boiling water.
