Daepae-Daepa Gui (Pork Belly-Wrapped Green Onion)

  • Thin-sliced pork belly (daepae)200g
  • Peperoncino (dried chili)5
  • Salta pinch
  • Black peppera pinch
  • Cooking oila little

Sauce

  • Soy sauce1 Tbsp
  • Sugar1 Tbsp
  • Mirin1 Tbsp
  • Cheongju (rice wine)1 Tbsp

    Cut the green onions in half.

    Wrap each green onion piece tightly with the thin pork belly slices.

    Season the rolls with salt and pepper.

    Heat oil in a pan and sear the rolls, turning so they brown evenly.

    Once the pork is cooked, add the sauce ingredients and peperoncino, and glaze until glossy.

Tips

Start searing seam-side down so the rolls don't unravel. Cheongyang chili works fine in place of peperoncino.
