Creamy Curry Pasta
Curry usually means rice or udon — but try it with pasta! Milk and heavy cream turn it into a silky curry cream sauce, landing somewhere deliciously between cream pasta and curry pasta.

- Bacon3 strips
- Onion1/2
- Broccoli1 cup
- Sliced garlic2 Tbsp
- Heavy cream1 cup
- Milk1/2 cup
- Curry powder2 Tbsp
- Salta pinch
- Black peppera pinch
- Parsley flakesa pinch
Directions

Thinly slice the onion.

Cut the bacon into 2cm pieces.

Blanch the broccoli in boiling water with 1 Tbsp salt, then rinse in cold water and drain well.

Boil the spaghetti for 7–8 minutes.

Heat olive oil in a pan and sauté the garlic, onion, and bacon. Once the onion turns translucent, add the milk, heavy cream, and curry powder, and bring to a simmer.

When the sauce comes to a boil, add the cooked pasta, then finish with the broccoli, salt, pepper, and parsley flakes.
Tips
Whisk the curry powder into the sauce well so it doesn't clump. If the sauce gets too thick, loosen it with a splash of pasta water or milk.
