Chicken Tikka Masala
A comforting Indian curry of tender chicken simmered in a creamy, mildly spicy tomato sauce. Made with everyday pantry staples, it's an easy way to enjoy Indian flavors even if spicy dishes aren't usually your thing.

- Plain yogurt1/2 tbsp
- Cooking wine1/2 tbsp
- Minced garlic1 tbsp
- Red pepper flakes (gochugaru)1 tsp

- Butter1 tbsp
- Tomato paste3 tbsp
- Plain yogurt1 tbsp
- Heavy cream3 tbsp
- Red pepper flakes (gochugaru)1.5 Tbsp
- Curry powder1 tbsp
- Water200 ml

Cut the chicken tenders into bite-sized cubes. Cutting them small helps the marinade soak in better.

Combine the chicken with plain yogurt, cooking wine, minced garlic, red pepper flakes, curry powder, and black pepper. Toss well and refrigerate for about 1 hour to marinate.

Finely chop the onion.

After marinating, sauté the chicken in a lightly oiled pan.

Set the cooked chicken aside. In the same pan, melt the butter and sauté the chopped onion.

Once the onion turns translucent, pour in the water.

Add the tomato paste, plain yogurt, heavy cream, red pepper flakes, and curry powder. Stir well and simmer over low heat. If you don't have tomato paste, tomato sauce works just as well.

Once the sauce starts to bubble, add the sautéed chicken back in and simmer over medium-low heat until it reaches your desired thickness. Season with salt to taste.

Plate it up and drizzle a little yogurt on top to finish. Enjoy your creamy, comforting chicken tikka masala!
Tips
No tomato paste on hand? Tomato sauce works just as well. Serve with naan or steamed rice to soak up every drop of the sauce.
