Diet Chicken & Cabbage Rice Paper Wraps

A favourite among dieters — 'dak-yang-ssam', short for chicken-breast cabbage wraps. It's a popular, easy and healthy diet meal, but buying it ready-made is pricey. This meal-prep recipe makes it cheaply with everyday ingredients from your fridge.

  • Cabbage leaves12 leaves
  • Rice paper12 sheets
  • Chicken breast300g
  • Onion1/4
  • Green onion1/4 stalk
  • Cheongyang chili pepper2 (optional)

Seasoning

  • Minced garlic1 tablespoon
  • Salt1 pinch
  • Black peppera little
  • Cooking wine1 tablespoon
  • Oyster sauce1 tablespoon
  • Soy sauce1 tablespoon
  • Olive oil1 tablespoon
  • Sesame oil1 tablespoon

    If using frozen chicken breast, thaw it in the fridge the day before, then season ahead with 1 tablespoon of cooking wine, salt and pepper.

    Cover the cabbage leaves with plastic wrap or a lid and microwave for 5 minutes to steam them until soft.

    Finely chop the filling ingredients such as onion, leek and Cheongyang chili pepper.

    Finely chop the chicken breast too, then season it with minced garlic and oyster sauce.

    To remove the raw smell of the vegetables, add the leek and onion to a pan with olive oil and stir-fry over high heat for 1 minute.

    Add the chicken breast and Cheongyang chili pepper and stir-fry until the chicken is cooked, then add soy sauce to one side of the pan and stir-fry together for 1 minute.

    Once the filling is fully cooked, turn off the heat, drizzle with sesame oil and mix everything evenly.

    Dip a sheet of rice paper in lukewarm water and lay it flat, place a cabbage leaf and some of the chicken filling on top, then roll it up tightly to finish.

Tips

Delicious as is, but you can also pan-fry them golden like fried dumplings, or bake them with tomato sauce like a gratin for a treat. Make a big batch and refrigerate for an easy meal-prep diet.
