Chicken Breast Salad
A fresh salad piled with plenty of crisp vegetables and golden pan-seared chicken breast, finished with a tangy mustard–soy dressing. Light yet filling enough to stand in as a full meal, it's a great way to eat healthily.

- Romaine lettuce1 head
- Radicchio1/4 head
- Cherry tomatoes5
- Italian parsleyA pinch
Chicken Marinade
- Milk1/2 cup
- Olive oil2 tbsp
- Cooking wine1 tbsp
- Mustard1/2 tbsp
- Minced garlic1/2 tbsp
- SaltA pinch
- Black pepperA pinch
- Rosemaryoptional
Dressing
- Olive oil3 Tbsp
- Soy sauce2 tbsp
- Vinegar2 tbsp
- Minced onion2 tbsp
- Sugar1 tbsp
- Sesame oil1/2 tbsp
- Minced garlic1 tsp
- SaltA pinch
- Black pepperA pinch

Prepare the ingredients. Soak the chicken breast in milk for about 10 minutes, then lift it out, rinse under water, pat dry, and marinate it in the marinade ingredients for 10 minutes.

Cut the romaine and radicchio into bite-sized pieces, soak them in cold water, then drain. Slice the cherry tomatoes and onion into thin rings.

Combine all the dressing ingredients in a bowl and mix well.

Heat a little olive oil in a hot pan and sear the surface of the chicken breast until golden.

Lower the heat, cover with a lid, and cook gently for 10–12 minutes until the inside is cooked through.

Arrange the leafy greens on a plate, top with the cooked chicken breast, and drizzle with the dressing to finish.
