  • Whole peppercorns1/2 tbsp
  • Brown sugar1.5 Tbsp
  • Minced garlic30g
  • Soy sauce1/2 cup (120 ml)
  • Mirin1/4 cup (60 ml)
  • Vinegar1/8 cup (30 ml)

    Step 1

    Prep the chicken: cut the boneless chicken into bite-sized pieces. Make the marinade: mix the soy sauce, vinegar, mirin, brown sugar, minced garlic, whole peppercorns, and bay leaves. Marinate: add the chicken to the marinade and refrigerate for at least 1 hour (marinating overnight deepens the flavor).

    Sear: heat oil in a pan and sear the chicken on both sides until golden brown.
