Chaeso Bap Jeon (Vegetable Rice Pancakes)
Quick rice pancakes made with leftover rice and whatever vegetables are in the fridge. A great way to get picky eaters to finish their veggies.

- Red bell pepper1/4
- Green pepper1/4
- Onion1/4
- Salta pinch
- Black peppera pinch

Finely dice the bell pepper, green pepper, onion, and sausage.

Beat the eggs in a bowl, then mix in the rice, diced ingredients, salt, and pepper.

Heat oil in a pan and ladle in the batter, frying each pancake until golden on both sides. Serve with ketchup.
