  • Cheongyang chili pepper1

Marinade

  • Cheongju (rice wine)1 Tbsp
  • Salta pinch
  • Black peppera pinch

Sauce

  • Gochujang1 Tbsp
  • Gochugaru (chili flakes)1.5 Tbsp
  • Soy sauce2 Tbsp
  • Minced garlic1/2 Tbsp
  • Oligo syrup1 Tbsp
  • Sugar1/2 Tbsp
  • Plum extract (maesil-aek)1 Tbsp
  • Sesame oil1/2 Tbsp
  • Black peppera pinch

    Slice the chili pepper and cut the chicken thighs into bite-size pieces.

    Toss the chicken with the marinade ingredients and let it rest for 10 minutes.

    Mix all the sauce ingredients in a bowl.

    Heat oil in a pan and cook the chicken. When it's about halfway done, add the sauce and stir-fry.

    Once the chicken is fully cooked, add the rice cake and chili pepper, toss to combine, and serve.

Tips

Marinating the chicken removes any gaminess and keeps it tender. Dial the gochugaru up or down to control the heat.
