Homemade Buffalo Wings
A homemade take on Buffalo wings, coating crispy chicken drumettes in a sweet-savory soy glaze spiked with Tabasco. Perfect with a cold beer.

- Cooking rice wine (or soju)4 tbsp

- Black pepperA pinch

Sauce
- Soy sauce3 tbsp
- Tabasco (hot sauce)3 tbsp
- Oligosaccharide syrup1 tsp
- Sugar1 tsp
- Minced garlic1 tsp

Rinse the chicken drumettes, then marinate them with 4 tbsp cooking rice wine (or soju), a pinch of salt, and a pinch of pepper for 30 minutes.

Heat 1 tbsp olive oil in a pan and pan-fry the drumettes until golden brown and cooked all the way through.

Combine all the sauce ingredients in a pot and bring to a boil. Once it bubbles, taste and adjust the seasoning to your liking, then add the fried drumettes and simmer until the sauce coats them.

Plate the wings and sprinkle a little parsley on top for a delicious finish.
Tips
Marinating the drumettes in milk helps remove any gaminess. If you're short on time, put them in a pot with enough water to cover, add 1 tbsp soju, and bring to a quick boil just until the surface is cooked.
