Bossam (Korean Boiled Pork Wraps)
Bossam is a great dish for entertaining guests. A whole block of pork belly is boiled with soy sauce and aromatic vegetables until tender and free of any porky smell, then served with ssamjang, napa cabbage, and white kimchi to wrap and enjoy.

- Soy sauce400 ml
- Cinnamon stick5 g
- Garlic cloves10 cloves
- Instant coffee powder1 tbsp
- Green onion2 stalks
- Onion1 whole
- Brown sugar100 ml
- White sugar100 ml
To Serve
- Ssamjang (seasoned soybean paste)as needed
- Napa cabbageas needed
- Baek-kimchi (white kimchi)as needed

Prepare a skinless block of pork belly and soak it in water for 1 hour to draw out the blood.

While the meat soaks, make the cooking liquid in a large pot with water, soy sauce, cinnamon stick, garlic, coffee powder, green onion, onion, brown sugar, and white sugar. Once it comes to a rolling boil, add the meat and boil over high heat for 40 minutes.

After 40 minutes, turn off the heat and let it rest, covered, for 20 minutes. Then take out the meat and slice it into bite-sized pieces.

Arrange the meat on a plate and serve with ssamjang, napa cabbage, and white kimchi to finish.
Tips
Boiling the meat too long makes it dry, so boil over high heat for just 40 minutes, then turn off the heat and let it rest for 20 minutes for a tender result.
