No-Gelatin Microwave Banana Milk Pudding (Flan)
A super-simple microwave pudding made with just three things — egg, banana milk, and sugar — no gelatin needed. The banana milk masks the eggy smell so you don't need vanilla extract, and a layer of caramel syrup on the bottom makes it just like flan. Use chocolate milk for a choco pudding, or strawberry milk for a strawberry one.

Get your ingredients ready — egg, banana milk, and sugar.

Beat the eggs until smooth.

Add the sugar to the banana milk and dissolve it — 15 seconds in the microwave helps it dissolve fast.

Strain the beaten egg through a sieve and mix it evenly into the banana milk.

Put the syrup ingredients (sugar and water) in a pan and, without stirring, tilt the pan to melt them into an amber caramel.

Pour the caramel into your serving dish; once it sets, pour the milk-and-egg mixture on top.

Line a plate with a paper towel and pour in a little water.

Set the dish on top and microwave it — 2 minutes on high, then continue on low.

Take it out, chill it thoroughly in the fridge, and enjoy.
Tips
No microwave? Cook it in a water bath (bain-marie) instead — the surface comes out much smoother and prettier. In the microwave, run it 2 minutes on high, then switch to low so the top cracks less. Always chill the pudding well in the fridge before serving — that's when it tastes best.
